Ingredients

  • Eggs6 large
  • Baby spinach (chopped)1 cup
  • Turkey sausage (cooked, crumbled)3 oz
  • Low-fat cheddar (shredded)1/4 cup
  • Salt & pepperto taste

Instructions

1. Preheat oven to 350°F. Spray a muffin tin with cooking spray. 2. Whisk eggs with salt and pepper. 3. Divide spinach, turkey, and cheese into 6 muffin cups. 4. Pour egg mixture evenly over fillings. 5. Bake 20-22 minutes until set. Store in the fridge for up to 4 days. Reheat 30 seconds in the microwave.
